Avocado Chickpea Filled Pitas

These Avocado Chickpea Pitas with plant feta and sumac is a fresh and flavourful meal that comes tougher in less than 20 minutes.

Note:
Firm avocados are ideal for this recipe so that they hold their shape.

Ingredients

Salad
  • 230 g chickpeas, strained and rinsed
  • 4 avocados, sliced
  • 70 g arugula
  • 1 lemon, zest + juice
  • 2 tbsp parsley, chopped
  • 1/2 red onion, thinly sliced
  • 1 tsp sumac
  • 1 tbsp olive oil
  • 60 g plant-based feta cheese, crumbled
  • salt and pepper to taste
Other
  • 8 pita breads

Instructions

  • Prepare the salad by adding all salad ingredients (chickpeas, avocados, arugula, lemon, parsley, red onion, sumac, olive oil, plant feta, salt and pepper) to a salad bowl and toss to combine. Adjust seasoning if needed.
  • Assemble by adding the salad to the pita breads.
