Caramelised Leek Pasta

This caramelised leek pasta features creamy plant feta, garlic and delicious leeks, tossed with pasta and finished with lemon. It’s the perfect quick weeknight meal, ready in 30 minutes!

Ingredients

Sauce
  • 3 tbsp plant-based butter
  • 2 leek onions, sliced
  • 2 spring onion, sliced
  • 4 garlic cloves, finely chopped
  • 1/2 tbsp sugar
  • 1/4 cup white wine
  • 1 cup reserved pasta water
  • 75 g plant-based feta cheese
  • 1 lemon, zest + juice
  • 230 g white beans, strained and rinsed
  • 100 g sunflower shoots
  • salt and pepper to taste
Other
  • 300 g pasta of choice

Instructions

  • Cook the pasta according to package instructions.
  • Heat a deep skillet with plant butter to medium-high heat. Once the butter has melted, add leeks and spring onion. Pour over sugar and leave the onion to caramelise, about 15 minutes.
  • Add in the garlic and cook until fragrant. Pour over the white wine and leave to reduce, about 2 minutes.
  • Add all remaining ingredients (pasta water, plant feta, lemon, white beans, sunflower shoots, salt and pepper) to the skillet and stir to combine. Leave the sauce to shimmer until feta has melted and sauce has thickened, about 8 minutes.
  • Add the pasta to the sauce and toss to combine.
