Cucumber Soybean Noodles

A simple and light noodle dish inspired by Asian cuisine. You can also try the recipe without noodles for a crispy and fresh asian cucumber side salad.

Ingredients

Salad
  • 300 g cucumber, sliced in half moons
  • 250 g soybeans, thawed
  • 150 g sugar peas, roughly chopped
  • 1 green onion, sliced
  • 50 g peanuts, roughly chopped
  • 180 g noodles
Dressing
  • 2 tbsp rice vinegar
  • 2 tbsp soy sauce
  • 1 tbsp syrup
  • 2 tbsp sesame oil

Instructions

  • Start by cooking the noodles according to package instructions.
  • Meanwhile, make the dressing by adding all ingredients (rice vinegar, soy sauce, syrup and sesame oil) to a small bowl and mix well. Set a side.
  • Cut up all salad ingredients (cucumber, sugar peas, green onion and peanuts) and combine with the noodles, soybeans and dressing in a large mixing bowl. Gently toss it all together.
