Double Chocolate Chip Muffins

These moist chocolate chip muffins are a chocolate lover's dream. They are incredibly rich, chocolaty and filled with creamy chunks of chocolate, perfect for all occations that calls for something sweet. Recipe makes about 16 muffins.

Ingredients

Batter
  • 2 cups flour
  • 1/2 cups cacao
  • 3/4 cups sugar
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1 tsp vanilla sugar
  • 1/2 tsp salt
  • 1 3/4 cups plant-based milk
  • 130 g plant-based butter
  • 1 tbsp appel cider vinegar
  • 200 g plant-based dark chocolate, roughly chopped or buttons

Instructions

  • Preheat the oven to 200 degrees celsius.
  • In a medium bowl mix together all dry ingredients (flour, cacao, sugar, baking powder, baking soda, vanilla sugar and salt) Set a side.
  • In a sauce pan, add plant butter and leave to melt on low heat. Once melted add plant milk and apple cider vinegar.
  • Add the liquids to the bowl with dry ingredients and mix until combined and all lumps are gone. The batter should be quite thick.
  • Add in 3/4 of the plant dark chocolate to the batter and mix to combine, leave the rest to top with.
  • Evenly divide the batter into muffin tins, before baking in the middle of the oven for 18-20 minutes. Preferably bake the muffins using a muffin tray, as this helps the muffins to keep their height.
