Easy Gnocchi In Tomato Sauce

A quick, easy and delicious gnocchi in homemade tomato sauce. The tomato sauce is made with a splash of white wine, basil and a tiny bit of sambal oelek, giving it a rich flavour in just a few minutes.

Ingredients

tomato sauce
  • 400 ml crushed tomatoes
  • 1 tbsp olive oil
  • 1 red paprika, roughly chopped
  • 2 garlic cloves, finely chopped
  • 2 tsp sambal oelek
  • 1 tbsp paprika
  • 1/3 cup white wine
  • 2 tbsp fresh basil (extra for topping)
  • salt and pepper to taste

  • 400 g gnocchi
  • 4 tbsp plant-based parmesan, grated

Instructions

  • Cook the gnocchi according to package instructions.
  • Heat a skillet with oil to medium heat and add paprika and garlic until the paprika softens slightly. Add in paprika powder and sambal oelek to the skillet and let cook for another minute. Add the white wine and let it reduce, about 5 minutes.
  • When the wine has reduced add the crushed tomatoes and basil and simmer on low heat until the sauce thickens, about 15 minutes. If the sauce becomes too thick add gnocchi water until desired consistency.
  • Season the sauce with salt and pepper to taste before adding the cooked gnocchi. Finish by topping with additional basil and grated parmesan.
