Fried Gnocchi With Basil Cream

This basil-heavy and garlicky sauce takes gnocchi to the next level. The gnocchi is crispy on the outside, with a pillow soft inside, a perfect comforting dinner.

Ingredients

Gnocchi
  • 500 g gnocchi
  • 2 tbsp neutral oil
  • salt and pepper to taste
basil cream
  • 1 cup plant-based sour cream
  • 40 g fresh basil
  • 2 garlic cloves
  • salt to taste
Other
  • 50 g plant-based parmesan
  • 50 g pine nuts, toasted
  • 230 g white beans, strained and rinsed
  • few leaves of fresh basil

Instructions

  • Make the basil cream by adding, all cream ingredients (plant sour cream, basil, garlic and salt) to a blender and blend until smooth, about 4 minutes. Set a side.
  • Boil the gnocchi according to package instructions.
  • Once the gnocchi is boiled, heat a sauce pan with oil to medium-high heat. Fry the gnocchi until golden, about 8 minutes. Season with salt and pepper.
  • Serve the gnocchi with basil cream, white beans, toasted pine nuts, plant parmesan and fresh basil.
