Minty Green Pea Coconut Soup

This soup is quick and easy to make, filling, healthy and packed with fresh flavours. Can be served as a light lunch or dinner.

Ingredients

Soup
  • 1 tbsp coconut oil
  • 1 yellow onion, roughly chopped
  • 1 cup green peas
  • 1 green chili, roughly chopped
  • 1 tbsp ginger powder
  • 1/2 cup coconut milk
  • 2 cups vegetable broth
  • 230 g white beans
  • 20 g fresh mint
  • salt to taste
Toppings
  • 40 g pine nuts, toasted
  • 1/2 cup green peas, thawed
  • 1/4 cup coconut milk
  • a few fresh mint leaves

Instructions

  • Heat a sauce pan with coconut oil to medium heat. Once the oil has melted add onion and cook until slightly transparent, about 5 minutes. Add peas, chili and ginger powder stirring until well combined. Add in Vegetable broth and coconut milk and bring to a boil. Reduce heat, and leave to shimmer until peas are cooked, about 5 minutes.
  • Transfer to a blender with white beans and mint and blend until smooth. Season with salt to taste.
  • Serve the soup topped with pine nuts, extra peas, coconut milk and mint. Optional to also serve with toast.
