Roasted Garlic Lemon Pasta

This garlic lemon pasta delivers bold, vibrant flavours with minimal effort. It’s the kind of pasta you can turn to a busy weeknight but that’s delicious enough to be shared with loved once on a Saturday.

Ingredients

Roasted Garlic
  • 1 whole head of garlic
  • 1 tbsp olive oil
Pasta Sauce
  • 2 tbsp olive oil
  • 1 lemon, zest + juice
  • 1/2 cups white wine
  • 60 g plant-based feta cheese
  • 1/2 cups reserved pasta water
  • salt and pepper to taste
Other
  • 500 g pasta
  • 60 g plant-based feta cheese
  • 60 g roasted pine nuts
  • few leaves fresh basil

Instructions

  • Preheat the oven to 175 degrees celsius.
  • Cut off the top of the garlic so each clove of garlic becomes visible. Drizzle the open garlic with oil, before wrapping in aluminum foil on a baking dish. Place in the middle of the oven and leave to roast for 45 minutes before setting it aside to cool. When the garlic has cooled, squeeze out the cloves from the skin and mash until smooth.
  • Once the garlic is done, start cooking you pasta according to package instructions.
  • Heat a deep skillet with oil to medium heat. Add the garlic and lemon cooking for 30 seconds. Add the white wine and leave to simmer until wine has reduced, about 2 minutes.
  • Add the remaining sauce ingredients (plant feta, pasta water, salt and pepper) and let simmer until creamy, about 5 minutes. If the sauce gets to thick, you can add more pasta water.
  • Add the pasta to the sauce and toss to combine. Top with more plant feta, pine nuts and basil before serving.
