Arugula Pesto Pizza Sandwich
This recipe combines the best of two worlds. A soft pizza crust that is baked folded, then filled with deliciousness.

Sandwich
- 1 pizza dough
- 2 tbsp olive oil
- 1/4 plant-based arugula pesto
- 20 g arugula
- 1/2 tomato, sliced
- 15 g plant-based parmesan, grated
Instructions
- Preheat the oven to max temperature, or around 250 degrees celsius.
- Form the pizza dough to thin rounds then brush the dough with oil until it’s fully covered. Fold in half and bake in the oven until golden. The oil will keep the dough from sticking together, which will make it possible to open it.
- Let the dough cool slightly before opening it and filling it with arugula pesto, arugula, tomato and plant parmesan.
