Asparagus And Arugula Pasta Salad
This asparagus and arugula pasta salad is sure to be a crowd-pleaser, it’s also quick, easy to make and the perfect recipe to welcome warm weather.

Ingredients
Salad
- 300 g pasta of choice
- 250 g asparagus, thinly sliced
- 70 g arugula
- 230 g white beans, strained and rinsed
- 70 g pecans, roughly chopped
- 200 g plant-based feta cheese, thinly sliced
Dressing
- 1/5 cups olive oil
- 1 tbsp lemon juice
- 2 tbsp balsamic vinegar
- 1 tsp salt
- 1/2 tsp black pepper
Instructions
- Start by cooking the pasta according to package instructions.
- In a small bowl, make the dressing by combining all ingredients (olive oil, lemon, balsamic vinegar, salt and black pepper). Mix until well combined.
- Once the pasta is cooked, add it to a large bowl along with asparagus, arugula, white beans and pecans. Pour over the dressing and toss until the salad is evenly coated with dressing. Finish by topping the salad with plant feta cheese before seasoning with additional balsamic vinegar, black pepper and salt to taste.
