Asparagus Pea Pesto Pasta

Try a new take on classic pesto. Combine pea to make a fresh and simple sauce - It's sure to become a family favourite.

Ingredients

Pesto
  • 150 g peas
  • 1/2 cups olive oil
  • 20 g fresh basil
  • 3 garlic cloves, minced
  • 1/2 lemon, juice
  • 50 g plant based parmesan
  • salt and pepper to taste
Asparagus
  • 200 g asparagus
  • 2 tbsp olive oil
  • salt to taste
Other
  • 300 g pasta of choice

Instructions

  • Prepare the pesto by adding all ingredients (basil, peas, garlic, plant parmesan, olive oil, lemon, salt and pepper) to a food processor and blend to a relatively smooth consistency. Set a side.
  • Cook the pasta according to package instructions.
  • Snap off woody ends of asparagus, then cut spears into smaller pieces.
  • Heat a deep skillet with oil to medium high heat. Add in asparagus and salt and cook until the asparagus is tender.
  • Stir in the pesto along with the cooked pasta and toss until well combined. Season with salt and pepper to taste.
