Asparagus Pea Pesto Pasta

Try a new take on classic pesto. Combine pea to make a fresh and simple sauce - It's sure to become a family favourite.
SERVINGS:
Ingredients
Pesto
- 150 g peas
- 1/2 cups olive oil
- 20 g fresh basil
- 3 garlic cloves, minced
- 1/2 lemon, juice
- 50 g plant based parmesan
- salt and pepper to taste
Asparagus
- 200 g asparagus
- 2 tbsp olive oil
- salt to taste
Other
- 300 g pasta of choice
Instructions
- Prepare the pesto by adding all ingredients (basil, peas, garlic, plant parmesan, olive oil, lemon, salt and pepper) to a food processor and blend to a relatively smooth consistency. Set a side.
- Cook the pasta according to package instructions.
- Snap off woody ends of asparagus, then cut spears into smaller pieces.
- Heat a deep skillet with oil to medium high heat. Add in asparagus and salt and cook until the asparagus is tender.
- Stir in the pesto along with the cooked pasta and toss until well combined. Season with salt and pepper to taste.
