Avocado Chickpea Filled Pitas
These Avocado Chickpea Pitas with plant feta and sumac is a fresh and flavourful meal that comes tougher in less than 20 minutes.
Note:
Firm avocados are ideal for this recipe so that they hold their shape.

Ingredients
Salad
- 230 g chickpeas, strained and rinsed
- 4 avocados, sliced
- 70 g arugula
- 1 lemon, zest + juice
- 2 tbsp parsley, chopped
- 1/2 red onion, thinly sliced
- 1 tsp sumac
- 1 tbsp olive oil
- 60 g plant-based feta cheese, crumbled
- salt and pepper to taste
Other
- 8 pita breads
Instructions
- Prepare the salad by adding all salad ingredients (chickpeas, avocados, arugula, lemon, parsley, red onion, sumac, olive oil, plant feta, salt and pepper) to a salad bowl and toss to combine. Adjust seasoning if needed.
- Assemble by adding the salad to the pita breads.
