Balsamic Roasted Radishes With Chive Yoghurt

Try this roasted radishes bowl with garlic, balsamic vinegar and chives. Made in about 30 minutes this recipe is to be a favourite.

Tips:

Serve with toasted bread to complete the dish or use it as it is for a side.

Ingredients

Roasted Radishes
  • 600 g radishes, halved
  • 2 tbsp neutral oil
  • 1 tbsp balsamic vinegar
  • salt and pepper to taste
Chives yoghurt
  • 1 cups plant based yoghurt
  • 10 g chives, finely chopped
  • 1 garlic clove, minced
  • 1/2 lemon (zest + juice)
  • salt and pepper to taste
Other
  • 10 g chives, finely chopped
  • 230 g chickpeas, drained and rinsed

Instructions

  • Start by preheating the oven to 225 degrees celsius and prepare a baking sheet with parchment paper.
  • In a bowl toss together radishes, oil, balsamic vinegar, salt and pepper. Pour the radishes onto the lined baking sheet and gently spread them out in a single layer.
  • Roast in the middle of the oven for 20 minutes, or until tender.
  • Meanwhile, make the chives yoghurt by combining all ingredients (plant yoghurt, chives, garlic, lemon, salt and pepper) in a medium sized bowl.
  • Assemble by spreading a layer of chives yoghurt onto plates before topping with radishes, chickpeas and more chives.
