Black Bean Tacos With Lime Mayonnaise

These simple black bean tacos with plant-based lime mayo are the best. They come together in less than 30 minutes and are packed with flavour.

Ingredients
Black Beans
- 460 g black beans, drained and rinsed
 - 1 tbsp neutral oil
 - 1 yellow onion, finely chopped
 - 1 jalapeño, finely chopped
 - 2 tbsp cumin
 - 1 tbsp paprika
 - 2 tsp chili powder
 - 2 tsp garlic powder
 - 1 tsp brown sugar
 - 1 tsp dried coriander
 - 3 tbsp water
 
Lime Mayonnaise 
- 1/2 cups plant-based mayonnaise
 - 1/2 tsp garlic powder
 - 1/2 tsp onion powder
 - 1 tsp apple cider vinegar
 - 1 lime, juice + zest
 - 1/2 jalapeño, finely diced
 - salt to taste
 
Other
- 8 tortillas
 - 200 g cabbage, shredded
 - 4 avocado, sliced
 - 20 g fresh parsley, finely chopped
 
Instructions
- Heat a skillet with oil to medium heat. Add the onion and jalapeño and cook until the onion is soft, about 2-3 minutes. Add the beans along with all spices (cumin, paprika, chili, garlic, sugar and coriander) and water. Bring to a boil, then lower heat and simmer until the water is absorbed.
 - Meanwhile, add all of the lime mayo ingredients (plant mayo, garlic, onion, vinegar, lime, jalapeño and salt) to a small bowl and stir to combine. Taste and adjust seasonings as needed. Set aside.
 - Heat the tortillas over an open flame, in a skillet or in the microwave.
 - To assemble, layer each tortilla with cabbage, beans, lime mayo and avocado. Top with parsley and serve.
