BLACK KALE PISTACHIO SALAD

Embarrassingly easy recipe. Toast the bread, mix the dressing and combine everything in a large bowl - and that’s it.

Ingredients

Salad
  • 200 g black kale, roughly chopped (steams removed)
  • 460 g chickpeas, drained and rinsed
  • 100 g plant-based parmesan
  • 60 g pistachio, roughly chopped
  • 4 slices bread, of choice
Dressing
  • 50 g plant-based parmesan
  • 1/4 cups plant-based greek yoghurt
  • 1 garlic clove, finely chopped
  • 1 tsp dijon mustard
  • 2 tsp apple cider vinegar
  • 1/2 tsp salt
  • 1/2 tsp pepper
  • 1 tbsp lemon juice
  • 1/4 cups olive oil

Instructions

  • Start by toasting the bread slices according to your preference.
  • Make the dressing by combining all ingredients (plant parmesan, plant yoghurt, garlic, dijon, vinegar, salt, pepper, lemon juice and olive oil) in a small bowl and mix until well combined.
  • Add everything (kale, chickpeas, plant parmesan, pistachio, toasted bread and dressing) to a large bowl and toss until well combined.
