BLACK KALE PISTACHIO SALAD
Embarrassingly easy recipe. Toast the bread, mix the dressing and combine everything in a large bowl - and that’s it.

Ingredients
Salad
- 200 g black kale, roughly chopped (steams removed)
- 460 g chickpeas, drained and rinsed
- 100 g plant-based parmesan
- 60 g pistachio, roughly chopped
- 4 slices bread, of choice
Dressing
- 50 g plant-based parmesan
- 1/4 cups plant-based greek yoghurt
- 1 garlic clove, finely chopped
- 1 tsp dijon mustard
- 2 tsp apple cider vinegar
- 1/2 tsp salt
- 1/2 tsp pepper
- 1 tbsp lemon juice
- 1/4 cups olive oil
Instructions
- Start by toasting the bread slices according to your preference.
- Make the dressing by combining all ingredients (plant parmesan, plant yoghurt, garlic, dijon, vinegar, salt, pepper, lemon juice and olive oil) in a small bowl and mix until well combined.
- Add everything (kale, chickpeas, plant parmesan, pistachio, toasted bread and dressing) to a large bowl and toss until well combined.
