Breaded Aubergine Burger With Tzatziki Sauce

Try these perfectly crispy aubergine burgers next time you need a banger burger to impress with. This burger will be a favourite and is hard to resist!

Ingredients
Aubergine
- 1 aubergine
- 1 cups flour
- 2 tsp salt
- 1/2 tsp black pepper
- 1 cups plant based milk
- 1/2 cups plant based parmesan
- 1/2 cups bread crumbs
Tzatziki
- 1 cups plant based greek yoghurt
- 1 cucumber, shredded
- 3 garlic cloves, minced
- 1 tbsp olive oil
- 1 tbsp lemon juice
- salt to taste
Other
- 1 red onion, sliced
- 4 burger buns
- 60 g greens of choice
Instructions
- Slice the aubergine into thin rounds, and sprinkle each side with salt, place in a colander and let sit over the sink to dram out water.
- In the meantime, prepare the tzatziki by combining all ingredients (plant greek yoghurt, cucumber, garlic, olive oil, lemon juice and salt) in a medium sized bowl. Season with salt to taste, set a side.
- Prepare the dipping station (placing flour + salt and pepper in one bowl, plant milk in one bowl and plant parmesan + bread crumbs in one bowl).
- Dip the aubergine slices in flour, then plant milk, then bread crumbs.
- Heat a skillet with oil to medium high heat and cook the aubergine until golden brown on both sides.
- Assemble the burger by layering tzatziki, red onion, greens and breaded aubergine in burger buns.
