Brothy White Beans

These brothy white beans infused with fresh thyme and onion make a cozy meal. They are delicious on their own or served with a side of crusty bread.

Ingredients

Broth
  • 2 tbsp olive oil
  • 2 yellow onions, sliced
  • 5 garlic cloves, sliced
  • 8 pickling onions
  • 4 cups vegetable broth
  • 2 tbsp rice vinegar
  • 460 g white beans, drained and rinsed
  • handful of fresh thyme
  • salt to taste

Instructions

  • Heat a large pot with olive oil to medium heat. Add yellow onion, garlic and pickling onion and cook until softened.
  • Pour over the vegetable broth along with rice vinegar and fresh thyme. Bring to a boil then lower the heat to simmer for about 1 hour.
  • Add the white beans and let simmer for an additional 20 minutes.
  • Adjust with salt to taste before serving.
