Brothy White Beans

These brothy white beans infused with fresh thyme and onion make a cozy meal. They are delicious on their own or served with a side of crusty bread.

Broth
- 2 tbsp olive oil
- 2 yellow onions, sliced
- 5 garlic cloves, sliced
- 8 pickling onions
- 4 cups vegetable broth
- 2 tbsp rice vinegar
- 460 g white beans, drained and rinsed
- handful of fresh thyme
- salt to taste
Instructions
- Heat a large pot with olive oil to medium heat. Add yellow onion, garlic and pickling onion and cook until softened.
- Pour over the vegetable broth along with rice vinegar and fresh thyme. Bring to a boil then lower the heat to simmer for about 1 hour.
- Add the white beans and let simmer for an additional 20 minutes.
- Adjust with salt to taste before serving.
