Caramelised Cabbage Pasta

This recipe brings out the sweetness, as well as a delicious earthiness of the cabbage. Paired with onion and garlic you've get a dish that’s insanely addictive!

Ingredients

Pasta
  • 500 g cabbage, thinly sliced
  • 1 yellow onion, thinly sliced
  • 5 garlic cloves, finely chopped
  • 50 g plant-based butter
  • 1/2 tsp salt
  • 1/4 tsp ground black pepper
  • 50 g plant-based parmesan
  • 1 cups reserved pasta water
  • 300 g pasta
  • 40 g chives, roughly chopped

Instructions

  • Cook the pasta according to package instructions.
  • Heat a large skillet to medium heat and add the plant butter to melt. Add the onion and cook until softened, about 5 minutes. Add the garlic and cook until fragrant, about 1 minute.
  • Add the cabbage, and season with salt and pepper, toss to coat the cabbage in the plant-butter. Lower the heat to medium-low, and cook until the cabbage is tender and golden-brown, 20 to 25 minutes, stirring occasionally.
  • When the cabbage is ready, add the pasta, pasta water and plant parmesan. Toss over medium heat until a glossy sauce forms and the pasta is evenly coated.
  • Add 2/3 of the chives and give a final toss to combine. Adjust salt and pepper to taste before serving the pasta garnished with more chives.
