CARAMELISED ONION CHICKPEAS

The caramelised onion creates a deep flavour in no time. This quick one pot is guaranteed to be your next go to meal.

Serving tips: rice, pasta, garlic bread, it’s whatever you’d like really.

Ingredients

Caramelised Onion Chickpeas
  • 2 tbsp olive oil
  • 3 yellow onions, sliced
  • 2 tbsp water
  • 5 garlic cloves, minced
  • 1 tsp balsamic vinegar
  • 1 tbsp paprika powder
  • 2 tbsp tomato paste
  • 1 tbsp dried oregano
  • 1 tbsp dried basil
  • 460 g chickpeas, drained and rinsed
  • 400 ml coconut milk
  • 200 g spinach
  • salt to taste

Instructions

  • Heat a large skillet with oil to medium heat. Add the onion and cook, stirring occasionally. When the skillet is dried out from oil, add water to help the onions brown evenly, about 7 minutes.
  • Once the onions are translucent, add balsamic vinegar and mix well. Leave to cook for another minute.
  • To the skillet, add garlic, paprika, oregano, basil and tomato paste. Mix well and let cook until the garlic softens. Add the remaining ingredients (chickpeas, coconut milk, spinach and salt). Cover the skillet and leave to simmer until the sauce thickens a little, about 10 minutes.
  • Serve with whatever you’d like, or just have them as they are!
