Cauliflower Parsnip Soup
Soup season is here, try this warming and creamy cauliflower and parsnip soup ready in just 30 minutes.

Ingredients
Soup
- 2 garlic cloves, chopped
- 1 yellow onion, roughly chopped
- 300 g parsnip, roughly chopped
- 500 g cauliflower, roughly choppes
- 1000 ml vegetable broth
- 1/4 cups plant-based sour cream
- 2 tbsp white wine vinegar
- salt and pepper to taste
Toppings
- 20 g chives, chopped
- 2 tbsp neutral oil
- 2 Stacky's BBQ
- olive oil
Instructions
- Heat a large pot with oil to medium high heat. Cut Stacky's into small pieces and fry until they get a crispy surface. Move the pieces to a smaller bowl.
- In the same pot, bring vegetable broth to a boil. Add garlic, yellow onion, parsnip, and cauliflower, and cook until the vegetables are tender, about 12 minutes.
- Mix the cooked vegetables along with the broth, plant-based sour cream, white wine vinegar until smooth. Season with salt and pepper to taste.
- Before serving, top with chopped chives, drizzled olive oil and crispy BBQ pieces.
