Cauliflower Parsnip Soup

Soup season is here, try this warming and creamy cauliflower and parsnip soup ready in just 30 minutes.

Ingredients

Soup
  • 2 garlic cloves, chopped
  • 1 yellow onion, roughly chopped
  • 300 g parsnip, roughly chopped
  • 500 g cauliflower, roughly choppes
  • 1000 ml vegetable broth
  • 1/4 cups plant-based sour cream
  • 2 tbsp white wine vinegar
  • salt and pepper to taste

Instructions

  • Heat a large pot with oil to medium high heat. Cut Stacky's into small pieces and fry until they get a crispy surface. Move the pieces to a smaller bowl.
  • In the same pot, bring vegetable broth to a boil. Add garlic, yellow onion, parsnip, and cauliflower, and cook until the vegetables are tender, about 12 minutes.
  • Mix the cooked vegetables along with the broth, plant-based sour cream, white wine vinegar until smooth. Season with salt and pepper to taste.
  • Before serving, top with chopped chives, drizzled olive oil and crispy BBQ pieces.
