Celeriac Orzo Soup

Let celeriac shine in this comforting orzo soup. The earthy and slightly sweet flavour of the celeriac really comes into its essence in this wonderful soup.

- 600 g celeriac
- 1/2 cups olive oil
- 4 garlic cloves, finely chopped
- 2 leek, thinly sliced
- 20 g fresh thyme, finely chopped
- 4 cups vegetable broth
- 4 bay leaves
- 460 g white beans, drained and rinsed
- 75 g orzo
- 10 g parsley, finely chopped
- salt and pepper to taste
Instructions
- Start by peeling the celeriac and cutting it into cubes.
- Heat a pot with olive oil to medium heat. Add leek and garlic and cook until fragrant.
- Add the celeriac, bay leaves and thyme and continue to cook for another 10 minutes, stirring occasionally.
- Pour over vegetable broth along with the beans. Give a good stir before lowering the temperature and leave to simmer covered.
- Once the celeriac is almost tender, about 25 minutes, pour in the orzo and leave to simmer for another 15 minutes, covered, or until the orzo is “al dente”.
- Season with salt and pepper to taste and garnish with parsley before serving.
