Cheesy Jalapeño Lentils

The combination of cheese and jalapeño hasn’t gone unnoticed by anyone. This recipe gives the classic comforting flavours new life.
Tips:
Recommendation to serve with some toasted sourdough.

Ingredients
Lentils
- 1 tbsp neutral oil
- 3 jalapeños, finely chopped
- 3 yellow onion, finely chopped
- 5 garlic cloves, minced
- 460 g lentils, drained and rinsed
- 400 ml crushed tomatoes
- 150 g plant-based mozzarella cheese
- salt to taste
Instructions
- Heat a skillet with oil to medium high heat and add jalapeño, onions and garlic. Cook until fragrant before adding the lentils and crushed tomatoes. Season with salt to taste.
- Top with plant mozzarella and leave to simmer covered until the cheese has melted.
