Chopped Cabbage Roll Skillet
This chopped cabbage roll skillet is deep in flavour and comes together easily. The spiced cabbage combined with tomato sauce, lentils and walnuts makes a hearty and comforting meal.

Ingredients
Cabbage
- 1 small head of cabbage, chopped
- 4 tbsp olive oil
- 1 yellow onion, roughly chopped
- 1/2 tbsp garlic powder
- 1 1/2 tbsp paprika powder
- 1 tsp salt
- 1 tsp pepper
- 1 tbsp tomato pure
- 1/4 cups fresh thyme (leaves only) + extra for topping
- 230 g lentils, strained and rinsed
- 400 ml crushed tomatoes
- 2 tbsp soy sauce
- 1 tsp apple cider vinegar
- 60 g walnuts
Instructions
- Heat a deep skillet with olive oil to medium heat. Add in the onion and cook until slightly transparent. Add the tomato pure, garlic, paprika, salt and pepper to the skillet, stirring to combine.
- Add the chopped cabbage and mix to combine withe the spices. Leave to sauté, the cabbage should be slightly caramelised and soft, about 12-15 minutes.
- When the cabbage has finished cooking add thyme, lentils, chorused tomatoes, soy sauce and apple cider vinegar to the sauce pan. Stir to combine before leaving to shimmer until the sauce thickens, about 7 minutes.
- Mix in the walnuts and adjust seasoning with salt and pepper to taste. Top with additional thyme.
