Coconut Red Thai Curry Noodles
These coconut thai red curry noodles comes together in just 20 minutes. They are extremely easy to make, yet packed with flavours.

Ingredients
Noodles
- 180 g noodles, of choice
- 4 garlic cloves, finely chopped
- 1 tbsp ginger powder
- 1 tbsp sesame oil
- 3 tbsp red curry paste
- 2 tbsp tomato paste
- 1/2 red chili, finely chopped
- 400 ml coconut milk
- 1 tbsp soy sauce
- 1 tsp syrup
- 1 lime, zest + juice
Topping
- 2 tbsp sesame seeds
- 4 tbsp coconut flakes
- Optionally, extra red chilli
Instructions
- Start by cooking the noodles according to package instructions.
- Heat a skillet with oil to medium heat. Add garlic and leave to cook, about 1 minute. Add red curry paste, tomato paste, chili and ginger and cook for another 5 minutes.
- Add in the remaning ingredients (coconut milk, soy sauce, syrup, and lime) stir to combine before leaving to shimmer for until thickened, about 5 minutes.
- Add in the noodles tossing gently until evenly coated. Top with sesame seeds, coconut flakes and extra chili before serving.
