Couscous Feta Lentil Wrap
This wrap goes for a satisfying lunch or dinner. They’re easy to make, and are great for meal prep.

Ingredients
Filling
- 1/2 cup couscous
- 230 g lentils, strained and rinsed
- 1 red onion, finely chopped
- 30 g fresh basil, roughly chopped
- 60 g plant-based feta
- 300 g cucumber, cubed
Dressing
- 2 tbsp olive oil
- 1 tbsp lemon juice
- 1/2 tbsp white wine vinegar
- salt and pepper to taste
Other
- 4 large wraps
- 1/2 batch white been hummus
Instructions
- Start by making the dressing. Combine all dressing ingredients (olive oil, lemon juice, vinegar, salt and pepper) in a small bowl and mix until well combined. Set a side.
- In a large bowl, combine the filling ingredients (couscous, lentils, onion, basil, plant feta and cucumber). Pour over the dressing and toss until combined.
- Assemble the wrap by spreading a layer of white bean hummus on top of a tortilla wrap. Add the filling to the wrap before folding the wrap tight.
- Heat a skillet with oil to medium heat. Add the wrap and let cook until golden brown, about 7 minutes each side. Remove from heat and serve immediately.
