CREAMY BROCCOLI SOUP
This broccoli soup is creamy and flavourful, and let’s be honest you have to love a meal that is simple, delicious and quick.

Ingredients

- 500 g broccoli, cut into small florets (steams too)
- 2 tbsp neutral oil
- 1 yellow onion, roughly chopped
- 6 garlic cloves, roughly chopped
- 2 cups vegetable broth
- 1 cups plant-based heavy cream (save some for topping)
- 100 g spinach
- 1/2 tsp cayenne pepper
- salt and pepper to taste
- 60 g pumpkin seeds (for topping)
Instructions
- Heat a large pot with oil to medium high heat. Add onion and garlic and cook until fragrant. Add broccoli and broth. Bring to a boil then leave to simmer until broccoli is tender.
- Transfer to a blender along with half of the plant cream, spinach, salt, pepper and cayenne. Mix until completely smooth before pouring back into the pot.
- Add the remaining plant cream and heat until first bubbles.
- Top with pumpkin seeds before serving.
