Creamy Chickpea Avocado Wrap

This grilled wrap with creamy avocado and spicy salsa verde comes together in just 20 minutes, which makes it perfect as a quick lunch.

Wrap
  • 4 tortillas
  • 230 g chickpeas, strained and rinsed
  • 2 avocados, cubed
  • 1/2 cup salsa verde
  • 1/2 cup plant-based sour cream
  • 60 g plant-based mozzarella cheese, grated
  • 100 g spinach
  • salt and pepper to taste

Instructions

  • Assemble the wrap by layering spinach, avocado, chickpeas, salsa verde, sour cream and plant mozzarella on top of a tortilla wrap. Season with salt and pepper befor folding the burrito tight.
  • Heat a skillet with oil to medium heat. Add the burrito and let cook until golden brown and cheese has melted, about 7 minutes each side. Remove from heat and enjoy.
