Creamy Miso-Pumpkin Pasta

With a thick and creamy sauce, this roasted butternut pasta recipe will be your new favorite cozy dinner. This simple recipe makes for the perfect fall comfort food.

Ingredients

  • 400 g pasta, of choice
  • 400 g butternut, peeled and cubed
  • 1 tbsp olive oil
  • 1 yellow onion, roughly sliced
  • 5 garlic cloves
  • 1 tbsp thyme, fresh
  • 1 tbsp rosemary, fresh
  • 1 tsp nutmeg
  • 1 tsp turmeric
  • 100 ml vegetable broth
  • 400 ml coconut milk
  • 2 tbsp white miso paste
  • salt, to taste
  • pepper, to taste

Instructions

  • Turn the oven to 200 degree celsius and line a large baking sheet with parchment paper.
  • Peel and cube the butternut squash and spread evenly onto the parchment paper. Roughly slice the yellow onion and add to the squash. Drizzle with olive oil and roast in the oven for 30 minutes.
  • While the squash is roasting, cook the pasta according to package instructions.
  • Once the squash is finished roasting, add to a blender together with the garlic, thyme, rosemary, nutmeg, turmeric, vegetable broth, coconut milk, miso paste, salt and pepper and mix until smooth.
  • Add the sauce to the pasta and stir until well combined. Enjoy!
