CREAMY MUSHROOM STROGANOFF

This recipe is quick and easy, and hands down the best mushroom stroganoff out there. It’s packed with umami, perfectly comforting, hearty, savoury and simply just delicious.

Ingredients

Sauce
  • 2 tbsp olive oil
  • 2 leek, sliced and rinsed
  • 750 g mixed mushrooms, sliced and rinsed
  • 6 garlic cloves, finely chopped
  • 1 handful fresh thyme, finely chopped
  • 1/2 cups white wine
  • 1 cups plant-based sour cream
  • 1/2 cups mushroom broth
  • 2 tbsp soy sauce
  • 1/4 cups plant-based parmesan
  • 1 tbsp dijon mustard
  • salt and pepper to taste
Other
  • 300 g pasta of choice

Instructions

  • Cook the pasta according to package instructions.
  • Heat a skillet with olive oil to medium-high heat. Add leeks and cook until fragrant. Add mushrooms and garlic, stirring to combine. Once the mushrooms has released their liquid, add thyme and white wine, and let simmer until wine has reduced.
  • Stir in the remaining ingredients (plant sour cream, mushroom broth, soy sauce, plant parmesan, dijon, salt and pepper.) Lower the heat to medium low and let simmer until sauce thickens.
  • Finish by adding in the pasta, tossing to combine.
