CREAMY MUSHROOMS WITH WHITE BEANS

Mushroom dishes are perfect for any dinner and occasion. Sautéed with garlic then coated in creamy parmesan sauce, these mushrooms are a homerun and also ready in just 15 minutes.

Ingredients

Creamy Mushrooms
  • 2 tbsp neutral oil
  • 500 g mixed mushrooms, rinsed and sliced
  • 1 yellow onion, finely chopped
  • 5 garlic cloves, minced
  • 2 tsp dried oregano
  • 2 tsp dried thyme
  • 2 tsp dried basil
  • 460 g white beans, strained and rinsed
  • 2 tbsp soy sauce
  • 1 cups plant-based heavy cream plant based heavy cream
  • 1/4 cups vegetable broth
  • 4 tbsp plant-based parmesan
  • 200 g spinach, roughly chopped
  • salt to taste

  • 4 slices bread
  • fresh parsley, to garnish

Instructions

  • Start by heating a skillet with oil to medium heat. Add the onion and garlic and cook until fragrant. Add the mushrooms and continue to cook until the water boils off.
  • Add all spices (oregano, thyme and basil) and white beans and give a good stir. Add your liquids (soy sauce, plant cream and broth), plant parmesan and spinach. Bring to a boil then leave to simmer until the spinach is wilted.
  • While the mushrooms are simmering, toast the bread and cut into cubes.
  • Serve the creamy mushrooms topped with toast cubes and parsley.
