Creamy Orange Sauce With Chickpeas and Spinach
These chickpeas comes to life when coated in a creamy sauce made with orange zest, fresh-squeezed orange juice and spinach.

Ingredients
Sauce
- 460 g chickpeas, strained and rinsed
- 1 tbsp neutral oil
- 1 tbsp cornstarch
- 100 ml vegetable broth
- 1 cup plant-based sour cream
- 100 g spinach, chopped
- 1 orange, zest + juice
- salt and pepper to taste
Other
- 1 cup rice
Instructions
- Start by cooking the rice according to package instructions.
- In a small bowl, mix cornstarch and vegetable broth until smooth.
- Heat a skillet with oil to medium heat and add in the chickpeas. Let cook for 1 minute. Add orange (zest + juice), plant sour cream and spinach and cook until the spinach wilts, about 5 minutes. Add the broth and starch mixture and leave to simmer until sauce thickens, about 5 more minutes. Season with salt and pepper to taste. Serve with rice.
