Creamy Pesto Orzo Soup
This warming and comforting creamy orzo soup is the easiest to make. It's a one-pot recipe ready in 20 minutes, it really doesn’t get more simple or more delicious.

Soup
- 1 tbsp olive oil
- 1 shallot, finely chopped
- 200 g orzo
- 3 cups vegetable broth
- 1/2 batch kale pesto
- 400 ml coconut milk
- 100 g kale, roughly chopped
- 460 g white beans, strained and rinsed
- 1 lemon, zest + juice
- salt and pepper to taste
Instructions
- Heat a deep pan with olive oil to medium high heat. Add the shallot and cook until slightly transparent, then stir in the orzo and cook until golden, about 3 minutes. Pour in the vegetable broth and bring to a boil before lowering the heat and leaving to shimmer until orzo is al dente, about 8 minutes.
- Stir in kale pesto, coconut milk, kale and white beans and let cook until the kale has wilted, about 3 minutes. Finish the soup of by adding lemon, and season with salt and pepper to taste.
