CREAMY POTATO ZUCCHINI SOUP

This soup is satisfying, smooth and creamy. It’s easy to make and ideal for both lunch or dinner. This soup will become a new family favourite.

Serve along with croutons.

Ingredients

Soup
  • 2 yellow onions, roughly chopped
  • 8 garlic cloves, roughly chopped
  • 500 g potatis
  • 2 zucchini, shredded
  • 4 cups vegetable broth
  • 20 g fresh basil
  • 1/2 cups plant-based parmesan
  • salt and pepper to taste

Instructions

  • Heat a large pot with butter to medium high heat. Add onion and garlic and cook until softened, about 5 minutes. Add in potatoes and zucchini and cook for another minute.
  • Pour in the broth and bring to a boil. Reduce the heat and leave to simmer covered until the potatoes are tender, about 20 minutes.
  • Transfer the broth to a blender along with the remaining ingredients (basil, plant parmesan, salt and pepper) and mix until smooth.
  • Adjust salt and pepper to taste before serving. (If the soup gets too cold while mixing, pour it back into the pot to reheat).
