Creamy Roasted Carrot Dip
This roasted carrot dip is creamy, flavourful and absolutely delicious! It's perfect to spread on crackers, on a sandwich, in a burger. The sky is the limit with this one.

Ingredients
Carrots
- 6 medium carrots, sliced
- 1 shallot, cut in half
- 4 tbsp olive oil
- salt, to taste
- 2 tsp paprika powder
- 1/2 lemon, juice
Instructions
- Preheat the oven to 225 degrees celsius and line a large baking sheet with parchment paper.
- Spread the carrots and shallot evenly onto the baking sheet. Drizzle with oil and sprinkle with salt. Roast the in the middle of the oven until the carrots are soft, about 15 minutes.
- Add the roasted carrots and shallot to a food processor along with paprika and lemon juice. Mix until smooth (or desired consistency). Season with salt to taste.
