Creamy Roasted Tomato Soup

This roasted tomato soup is an easy solution to a delicious soup. It’s creamy, flavourful and requires minimum effort.

Ingredients

Roasted Tomatoes
  • 500 g cherry tomatoes
  • 4 tomatoes
  • 5 head garlic
  • 2 shallots, cut in half
  • 1 tbsp olive oil
  • 1/2 tbsp dried basil
  • 1/2 tbsp dried oregano
  • 1 tbsp paprika
  • 1/2 tsp red chili flakes
  • salt and pepper to taste
  • 1/2 cups plant-based heavy cream
Topping
  • 1/2 cups plant-based neutral yoghurt
  • few leaves fresh basil

Instructions

  • Preheat the oven to 200 degrees celsius.
  • Slice to top of the garlic and place it head down in a baking dish.
  • To the baking dish add the cherry tomatoes, tomatoes, shallots, olive oil, basil, oregano, paprika, chili flakes, salt and pepper and toss until tomatoes are evenly coated in the spices.
  • Bake the tomatoes until softened, about 35 minutes.
  • Add the tomatoes to a blender along with heavy cream. Squeeze the garlic cloves out of the head of garlic and add to the blender. Blend until smooth. Adjust the seasoning according to taste.
  • Top with yoghurt and fresh basil before serving.
