Creamy Roasted Tomato Soup
This roasted tomato soup is an easy solution to a delicious soup. It’s creamy, flavourful and requires minimum effort.

Ingredients
Roasted Tomatoes
- 500 g cherry tomatoes
- 4 tomatoes
- 5 head garlic
- 2 shallots, cut in half
- 1 tbsp olive oil
- 1/2 tbsp dried basil
- 1/2 tbsp dried oregano
- 1 tbsp paprika
- 1/2 tsp red chili flakes
- salt and pepper to taste
- 1/2 cups plant-based heavy cream
Topping
- 1/2 cups plant-based neutral yoghurt
- few leaves fresh basil
Instructions
- Preheat the oven to 200 degrees celsius.
- Slice to top of the garlic and place it head down in a baking dish.
- To the baking dish add the cherry tomatoes, tomatoes, shallots, olive oil, basil, oregano, paprika, chili flakes, salt and pepper and toss until tomatoes are evenly coated in the spices.
- Bake the tomatoes until softened, about 35 minutes.
- Add the tomatoes to a blender along with heavy cream. Squeeze the garlic cloves out of the head of garlic and add to the blender. Blend until smooth. Adjust the seasoning according to taste.
- Top with yoghurt and fresh basil before serving.
