CREAMY SPINACH ONE-POT ORZO
This simple creamy spinach orzo is about to be a new weeknight favourite. It’s a fast dinner made in one pot with incredible flavour! The family will all enjoy this fresh take on a creamy pasta dish. Quick, easy, and delicious!

Ingredients
Creamy Orzo
- 460 g chickpeas, drained and rinsed
- 6 garlic cloves, finely chopped
- 1 tbsp plant-based butter
- 200 g orzo
- 1/2 cups white wine
- 2 cups vegetable broth
- 50 g plant-based parmesan, grated
- 1/2 cups plant-based cream
- 1 tbsp dried thyme
- 1 tsp dried oregano
- salt and pepper to taste
- 100 g spinach, roughly chopped
Instructions
- Heat a deep skillet with butter to medium high heat. Add garlic and cook until fragrant.
- Add the orzo and pour over the white wine and leave to simmer until the wine has reduced.
- Pour in the vegetable broth, chickpeas, spinach, plant parmesan, plant cream, thyme, oregano, salt and pepper. Bring to a boil and cook until the pasta is “al dente”. Adjust with salt to taste before serving.
