CREAMY SUN-DRIED TOMATO BEANS
A simple recipe that takes white beans to the next level, great as a quick weeknight dinner.
Note:
Serve along with toasted bread slices.

Ingredients
Beans
- 460 g white beans, drained and rinsed
- 2 shallots, finely chopped
- 6 garlic cloves, finely chopped
- 1 tbsp olive oil
- 3 tbsp tomato paste
- 1 tsp red miso paste
- 1/2 tsp chili flakes
- 1/2 tsp paprika powder
- 400 g silken tofu
- 1 cups water
- 4 tbsp nutritional yeast
- 50 g sun-dried tomatoes, chopped
- 200 g spinach
- salt to taste
Instructions
- Heat a skillet with oil to medium heat. Add shallots and garlic and sauté until softened, about 5 minutes. Add tomato paste, red miso, chili flakes and paprika powder, and cook for another minute.
- Transfer to a blender along with tofu, water and nutritional yeast. Mix until smooth.
- Pour back into the skillet, adding sun-dried tomato, spinach and white beans. Leave to simmer until the spinach has wilted. Adjust salt to taste before serving.
