Creamy Vegan One-Pot Lemon Orzo

There’s not many things that are better than a comforting plate of beans and green, and this creamy one-pot orzo with butter beans is the perfect recipe for that. So if you’re looking for an easy weeknight dinner that will make you feel warm and cozy, this recipe can’t be recommended enough.

Ingredients

Orzo
  • 1 tbsp plant-based butter
  • 4 garlic cloves, minced
  • 3 shallots, finely chopped
  • 300 g orzo
  • 1 3/4 cups vegetable broth
  • 1/2 lemon, zest + juice
  • 200 ml coconut milk
  • 150 g kale, roughly chopped
  • 50 g plant-based parmesan
  • 230 g butter beans, strained and rinsed
  • salt and pepper to taste

Instructions

  • Heat a deep skillet over medium high heat. Add the butter, shallots and garlic and cook until onion is fragrant, about 2 minute. Stir in the orzo and cook until golden and toasted, about 2 minutes.
  • Add in the vegetable broth, kale, lemon juice and lemon zest. Stir to combine before letting shimmer until the orzo is al dente, stir occasionally, about 8 minutes. It should become very creamy.
  • Add in the remaining ingredients (coconut milk, plant parmesan and butter beans) and cook for another few minutes until warmed through, about 3 minutes. Season with salt and pepper to taste.
