Crunchy Asian Soybean Salad
An easy to make and fresh Asian inspired salad with flavour of sesame, chili and lime.

Ingredients
Dressing
- 3 garlic cloves, finely chopped
- 1 red chili, finely chopped
- 2 shallots, finely chopped
- 1 lime, zest + juice
- 2 tsp syrup
- 2 tbsp sesame oil
- 2 tbsp soy sauce
Salad
- 250 g soy beans, thawed
- 150 g cabbage, thinly sliced
- 250 g pak choi, sliced
- 5 spring onion, chopped
- 60 g peanuts, roughly chopped
Instructions
- Start by preparing the dressing by mixing all dressing ingredients (garlic, chili, shallots, lime, syrup, sesame oil and soy) in a small bowl and mix until well combined. Set a side.
- In a large mixing bowl, add all salad ingredients (soy beans, spring onions, cabbage, pak choi and peanuts). Drizzle over the dressing and toss to combine.
