Cucumber Soybean Noodles
A simple and light noodle dish inspired by Asian cuisine. You can also try the recipe without noodles for a crispy and fresh asian cucumber side salad.

Ingredients
Salad
- 300 g cucumber, sliced in half moons
- 250 g soybeans, thawed
- 150 g sugar peas, roughly chopped
- 1 green onion, sliced
- 50 g peanuts, roughly chopped
- 180 g noodles
Dressing
- 2 tbsp rice vinegar
- 2 tbsp soy sauce
- 1 tbsp syrup
- 2 tbsp sesame oil
Instructions
- Start by cooking the noodles according to package instructions.
- Meanwhile, make the dressing by adding all ingredients (rice vinegar, soy sauce, syrup and sesame oil) to a small bowl and mix well. Set a side.
- Cut up all salad ingredients (cucumber, sugar peas, green onion and peanuts) and combine with the noodles, soybeans and dressing in a large mixing bowl. Gently toss it all together.
