Easy Plum And Broccoli Salad
This plum and broccoli salad bring a mix of sweet and savoury flavours, and it’s absolutely delicious. It’s aslo easy to make.

Ingredients
Dressing
- 100 ml olive oil
- 2 tbsp lemon juice
- 1 tbsp syrup
- 1 tbsp white vine vinegar
- salt and pepper to taste
Salad
- 1 cup quinoa
- 150 g mixed greens
- 6 plums, sliced
- 2 avocados, cubed
- 250 g broccoli, cut into small florets
- 230 g white beans, strained and rinsed
- 75 g plant-based feta cheese
- 4 tbsp pumpkin seeds
Instructions
- Start by cooking the quinoa according to package instructions.
- In a small bowl, add all dressing ingredients (olive oil, lemon juice, syrup, vinegar, salt and pepper) and mix until well combined, set a side.
- In a large bowl, add all sallad ingredients (quinoa, greens, plums, avocados, broccoli, white beans, plant feta and pumpkin seeds). Pour over the dressing and toss gently to combine.
