Easy Plum And Broccoli Salad

This plum and broccoli salad bring a mix of sweet and savoury flavours, and it’s absolutely delicious. It’s aslo easy to make.

Ingredients

Dressing
  • 100 ml olive oil
  • 2 tbsp lemon juice
  • 1 tbsp syrup
  • 1 tbsp white vine vinegar
  • salt and pepper to taste
Salad
  • 1 cup quinoa
  • 150 g mixed greens
  • 6 plums, sliced
  • 2 avocados, cubed
  • 250 g broccoli, cut into small florets
  • 230 g white beans, strained and rinsed
  • 75 g plant-based feta cheese
  • 4 tbsp pumpkin seeds

Instructions

  • Start by cooking the quinoa according to package instructions.
  • In a small bowl, add all dressing ingredients (olive oil, lemon juice, syrup, vinegar, salt and pepper) and mix until well combined, set a side.
  • In a large bowl, add all sallad ingredients (quinoa, greens, plums, avocados, broccoli, white beans, plant feta and pumpkin seeds). Pour over the dressing and toss gently to combine.
