Glass Noodle Salad With Mango

Glass Noodle Salad - quick, easy and delicious! Filled with fresh veggies and tossed in a flavourful peanut dressing.

Ingredients
Dressing
- 1/2 cups peanut butter
- 1 lime, juice
- 2 tbsp soy sauce
- 1 garlic cloves, minced
- 2 tbsp ginger, minced
- 2 tbsp rice vinegar
- 1 tsp sambal oelek
- 1/4 cups water
Other
- 3 servings glass noodles
- 400 g cabbage, thinly sliced
- 150 g mango, cubed
- 1 cucumber, sliced
- 60 g peanuts, roughly chopped
- 250 g soy beans
Instructions
- Start by cooking the noodles according to package instructions.
- In a small bowl add all dressing ingredients (peanut butter, lime, soy, garlic, rice vinegar, sambal oelek and water) and whisk until well combined.
- In a large bowl add all salad ingredients (glas noodled, cabbage, mango, cucumber, peanuts and soy beans). Pour in the dressing and toss to combine.
