Golden Curry Ramen Soup

Ramen
- 2 tbsp coconut oil
- 460 g lentils, drained and rinsed
- 2 carrots, finely chopped
- 3 tbsp yellow curry powder
- 400 ml coconut milk
- 600 ml vegetable broth
- 400 g baby corn spears, drained
- 200 g bamboo shoots, drained
- 3 lime leaves
- 1 lime, juice
- salt to taste
- 4 servings noodles
Instructions
- Cook the noodles according to package instructions.
- Heat a large pot with coconut oil. Add carrot and lentils along with curry powder and cook for a few minutes, careful not to burn.
- Add coconut milk, vegetable broth, baby corn, bamboo shoots and lime leaves. Leave to simmer covered for about 10 minutes.
- Finish by squeezing in lime juice and adjust salt to taste. Serve along with noodles.
