Golden Curry Ramen Soup

Ingredients

Ramen
  • 2 tbsp coconut oil
  • 460 g lentils, drained and rinsed
  • 2 carrots, finely chopped
  • 3 tbsp yellow curry powder
  • 400 ml coconut milk
  • 600 ml vegetable broth
  • 400 g baby corn spears, drained
  • 200 g bamboo shoots, drained
  • 3 lime leaves
  • 1 lime, juice
  • salt to taste
  • 4 servings noodles

Instructions

  • Cook the noodles according to package instructions.
  • Heat a large pot with coconut oil. Add carrot and lentils along with curry powder and cook for a few minutes, careful not to burn.
  • Add coconut milk, vegetable broth, baby corn, bamboo shoots and lime leaves. Leave to simmer covered for about 10 minutes.
  • Finish by squeezing in lime juice and adjust salt to taste. Serve along with noodles.
