GREEN PEA PESTO PASTA

This pasta is a creamy, bright and vibrant. It comes together in less then 15 minutes, which makes it perfect for those busy weeknights.

Ingredients

Green Pea Sauce
  • 200 g green peas, thawed
  • 1/2 cups plant-based pesto, homemade or store brought
  • 400 ml coconut milk
  • salt and pepper to taste
Other
  • 300 g pasta of choice
  • 1/2 cups plant-based parmesan, grated
  • fresh basil, to garnish

Instructions

  • Cook the pasta according to package instructions.
  • Add all sauce ingredients to a blender and mix until smooth. Adjust with salt and pepper to taste.
  • Pour the sauce over the pasta and toss until well combined. Finish by topping with plant parmesan and a few leaves of fresh basil.
