Homemade Chocolate Bite Cookies
Making bakery-worthy chocolate bite cookies is much easier than it seems and this recipe is truly the best and yet so simple. If you want a chewier cookie, switch out the light muscovado sugar for brown sugar.

Ingredients
- 150 g plant-based butter
- 1/3 cup light muscovado sugar
- 1/4 cup granulated sugar
- 3 tbsp flax egg (1 tbsp flax meal + 2 tbsp water)
- 2 tsp vanilla sugar
- 1 tsp baking soda
- 2 tsp cornstarch
- 1 cup all purpose flour
- 150 g plant-based dark chocolate
- sea salt
Instructions
- Start by roughly chopping the dark chocolate. Set a side.
- In a medium bowl mix together flour, baking soda and cornstarch.
- In another bowl whip butter, sugar, and muscovado sugar on high speed until light and fluffy. Add in the flax egg and continue whipping for about a minute.
- Add in the remaining ingredients (flour, baking soda and cornstarch) except the chocolate and sea salt, and whip until combined. Lastly fold in the chocolate (save a few chocolate chunky to top the cookies with).
- Cover the dough with plastic wrap and leave to cool in the fridge for 20 minutes.
- Preheat the oven to 175 degrees celsius and line two large baking sheets with parchment paper.
- Once the dough has rested, divide into equally sized balls and place on the baking sheets. Make sure to give the cookies enough space as they will float out.
- Top the dough balls with the remaining chocolate and bake in the middle of the oven for 12 to 15 minutes (Make sure not to overcook as you will lose the chewiness).
- Once finished baking, sprinkle the cookies with sea salt before leaving to cool completely.
