Kale Date Salad With Green Apple

This salad has the perfect amount of crunch, sweetness, savouriness and literally everything that makes a salad crave-worthy.

Note:
Quinoa can be cooked in advance to have the dish ready in under 15 minutes.

Ingredients

Salad
  • 200 g kale, chopped
  • 200 g romaine lettuce , roughly chopped
  • 1/2 cups quinoa
  • 460 g chickpeas, strained and rinsed
  • 10 dates, pitted and chopped
  • 100 g plant based feta cheese
  • 60 g walnuts, roughly chopped
  • 1 green apple, thinly sliced
Dressing
  • 1/2 cups olive oil
  • 3 tbsp white wine vinegar
  • 1 shallot, finely chopped
  • 1 tbsp syrup
  • 1 tsp dijon mustard
  • salt and pepper to taste

Instructions

  • Cook the quinoa according to package instructions.
  • Make the dressing by combining all ingredients (olive oil, vinegar, shallot, syrup, dijon, salt and pepper) in a small bowl and mix until combined.
  • Assemble the salad by adding kale, lettuce and quinoa along with the dressing to a large bowl. Toss to combine. Add the remaining salad ingredients (chickpeas, dates, plant feta cheese, walnuts and green apple) and toss once more until well combined.
