Lemon Ginger Spaghetti With Tempeh
If you ever crave a light spaghetti, try this zesty and mouth watering recipe that is ready in just 20 minutes.

Ingredients
Sauce
- 200 g tempeh
- 1 lemon, zest + juice
- 1 tbsp fresh ginger, grated
- 1/2 cup reserved pasta water
- 100 g plant-based parmesan
- 2 tbsp plant-based butter
- 2 garlic gloves, sliced
- salt and pepper to taste
- 20 g fresh basil, chopped
Other
- 300 g spaghetti
Instructions
- Start by cooking the spaghetti according to package instructions.
- Meanwhile, heat a deep skillet with plant butter to medium high heat. Add garlic and tempeh and let cook until golden, about 7 minutes. Combine all remaning sauce ingredients (lemon zest, lemon juice, ginger, pasta water, plant parmesan, basil) in the skillet and let cook until creamy, about 5 minutes. Season with salt and pepper to taste.
- Add the spaghetti to the sauce and toss to combine. You can optional top with extra basil, plant parmesan and lemon zest before serving..
