Lentil Bowl With Minty Green Pea Cream

This lentil salad is a summer favorite. It’s fresh, light and delicious. Make sure to prepare the red onions, minty green pea cream and vegan whipped feta cheese dip ahead for a super quick lunch.

Ingredients

Salad
  • 230 g green lentils, pre-cooked, strained and rinsed
  • 280 g cabbage, thinly sliced
  • 200 g cucumber, cubed
  • 280 g broccoli, cut into small florets
  • 20 g pumpkin seeds
  • 20 g hemp seeds
  • 40 g pickled red onion
  • 1/2 batch minty green pea creme
  • 1/4 batch vegan whipped feta cheese dip

Instructions

  • Once the vegetables are cut up, add them to a large bowl along with the lentils and red onion. Toss to combine.
  • Divide the vegetables equally between bowls and top with green pea cream, whipped feta dip, pumpkin seeds and hemp seeds.
