Limey Mushroom Tacos

The perfect Friday taco, that comes together in under 30 minutes - full of big, bold Tex-Mex flavour!

Ingredients
Lime Parsley Sauce
- 2 avocados, cubed
- 1 cups plant-based sour cream
- 20 g fresh parsley
- 1 lime, zest and juice
- 1 spring onion
- salt to taste
Taco mushrooms
- 1 kg mixed mushrooms, sliced
- 1 tbsp neutral oil
- 3 tbsp taco seasoning
Other
- 12 small tortillas
- 1 jalapeño, sliced
- 1 yellow onion, finely chopped
- 100 g plant-based feta cheese
Instructions
- Start by making the lime parsley sauce by adding all ingredients (avocado, plant sour cream, parsley, lime, spring onion and salt) to a blender and mix until smooth.
- In a bowl add all mushroom ingredients (mushrooms, oil and taco seasoning) and toss to coat the mushrooms evenly.
- Heat a skillet over medium high heat and add the mushrooms. Cook, stirring occasionally, until the mushrooms are soft, brown and crispy.
- Warm the tortillas before assembling the taco by layering lime parsley sauce, taco mushrooms, jalapeño, yellow onion and crumbled plant feta onto the tortillas.
