Marshmallow Dark Chocolate Cookies
When it comes to irresistible cookies, it's hard to beat the combination of rich chocolate and gooey marshmallows that melts in your mouth. This recipe, takes the classic chocolate chip cookie to the next level with a perfect balance of sweetness.

Ingredients

- 2 1/4 cups flour
- 1 tsp baking soda
- 1 tsp salt
- 150 g plant-based butter
- 1/4 cups neutral oil
- 1/2 cups sugar
- 1 cups brown sugar
- 2 tbsp plant-based milk
- 1/2 tsp vanilla sugar
- 100 g plant-based dark chocolate, roughly chopped
- 1/2 cups plant-based marshmallow
Instructions
- In a bowl, mix together flour, baking soda and salt. Set a side.
- In a mixing bowl, add butter, oil, sugar and brown sugar and whip until well combined. Add plant milk, vanilla sugar and the flour mix, and mix until it forms a dough, making sure not to over mix.
- To the dough add marshmallow and chocolate and mix until evenly spread out in the dough.
- Form the dough into small balls (30 g each) and place in the fridge for 30 minutes.
- Preheat the oven to 180 degrees celsius and prepare two large baking sheets with parchment paper.
- Place the cookie dough balls on the parchment paper, making sure to leave enough space in-between, recommended to bake about 10 cookies on each sheet.
- Bake in the middle of the oven for 8-10 minutes, or until slightly golden.
